Many joke that the only food college students can afford is ramen, but there are actually so many easy ways to make amazing recipes using this inexpensive staple! This super quick ramen noodle salad includes just a few ingredients and only takes about fifteen minutes to make. Next time you’re hosting friends or just looking to meal prep, try out this easy, nutritious recipe:
6 packages Chicken Ramen Noodles (noodles and flavor packs)
1/2 cup olive oil
3/4 cup apple cider vinegar
1/2 cup sugar
Black pepper to taste
3 cups broccoli
1 cup celery
2/3 cup sliced almonds
In a large bowl, add the ramen noodles (save the flavor packets for later!) and 6-8 cups of warm water. Let soak for 10 minutes, stirring every couple of minutes. Drain and set aside.
In a small bowl, whisk together the 6 flavor packets that you saved, the olive oil, apple cider vinegar, sugar, and black pepper. Set aside.
In a large bowl, add the cooked ramen noodles, the broccoli, and the celery. Pour dressing on top and stir everything together until combined. Top with the sliced almonds and it’s ready to serve!
